Cattabriga PSK Kel Gelato Pasteuriser / Bain-Marie / Micronizer
In order to make the highest grade traditional italian gelato, we recommend the Cattabriga PSK KEL pasteuriser / microniser. This patented system amalgamates all the gelato ingredients with a pasteurising beater. The ingredients are then sucked into the microniser which is spinning at high speed. The mixture is then pushed against a "beehive where the ingredients , fats and solids are milled and broken down into micro sized pieces and then chilled down to the desired temperature. This process gives the end products a superior taste and fell on the pallet which is what all the Cattabriga range produces.
